Potato casserole with aubergine and duck breast

Every week I buy organic vegetables. It’s better for your health but also tastier. In one of the packages I got aubergine.

During the week I try to make quick meals. That time I already boiled potatoes the day before; that speeded up my cooking time. I came from work quite late and I was starving. One of key points when you try to keep your weight under control is regular eating. I know they are people that can skip their dish for many hours but believe me, for me even 15 minutes make a huge difference. Some people know me very well… When I’m hungry, I’m angry 😉 Not mentioning weak… Ok, back to the dinner.

 

On my dish was: Potato casserole with aubergine and duck breast

Ingredients (for 2 people):

–         4 middle size potatoes (boil but do not salt)

–         1 small aubergine

–         1 mushroom (you can use more but I had just one:))

–         Egg whites from 2 eggs (these were leftovers… you can use whole egg- then 1 is enough)

–         1 slice Gouda cheese

–         ½ onion

–         1 garlic clove

–         100g sliced smoked duck breast (with a little bit of fat)

–         1 tsp. curry

–         Salt and pepper

–         1tsp. oil for frying

 

Know-how:

To speed up the backing time I fried, with a little amount of oil, all vegetables. See below for more details…

  1. Mash potatoes, press garlic, add egg whites, curry, salt, pepper and mix all ingredients.
  2. Peel aubergine and cut into 1cm slices.
  3. Peel onion and cut half into slices.
  4. Cut mushroom into slices.
  5. Fry all vegetables for few minutes (use that time to preheat your oven and clean up all mess…).
  6. Spread half of the potatoes mix in the prepared pan.
  7. Top with the vegetables and sliced duck breast.
  8. Spread second half of the potatoes mix.
  9. Decorate with cheese.
  10. Bake 15-20 min in 200oC.

Yummy, it was so tasty. I’m getting hungry again…:)

Tosti with blue cheese and tomato

Hmm, there is nothing better than spoil yourself with a homemade tosti.

Once I ate it, I felt like I was in heaven! After a long period of rain, wind and clouds it was finally sunny and warm. I had great and healthy lunch in my hand. I felt great. I wish all of you could enjoy and feel happy with such a simple things and really enjoy what you eat. Cooking is an art, take advantage of it. You can make it simple; it’s still fine and brings a lot of satisfaction…

Today on my dish was: Tosti with blue cheese and tomato

Ingredients:

–         (White) bread

–         Cherry tomatoes

–         Blue cheese

–         Fresh basil

–         Salt and pepper

Know-how:

  1. Cut bread into thick slices
  2. Cut blue cheese into thick slices
  3. Cut tomatoes into half
  4. Cover one slice with all ingredients
  5. Season with salt and pepper
  6. Cover with fresh basil
  7. Top with the other slice
  8. Put in a toaster for couple of minutes
  9. Done:)

Hello Kitty Limo!

Hi everyone,

My excuses for not being with you for the last couple of days.

Something nice has happened.

Last Sunday together with my husband I was roller skating along the canal and I heard some strange noise.

I neglected it and moved on. One and a half hours later when I was going back, I heard the same noise again. This time we stopped to see what that was.

We looked around and we found a super small kitty in the bushes. He was alone, crying so much!

I love animals and I couldn’t leave it there. It was clearly alone and frightened. We decided to pick him up and take care of him. Well, with roller skates it is a bit difficult especially when you don’t know how such a kitty could react. We went back home and took the bikes. We took it home. It was so beautiful! The kitty was around 4 weeks old. Blue eyes, nice soft fur, it was just lovely.

Just the first day we fell in love with this kitty! Everything turned upside down. Now I can understand why people having babies do not want to go out of home. Such a small cutie can give you so MUCH back! Last couple of days were the best moments in our live! Unfortunately, we already have two older cats at home and letting this one to stay could be a bit problematic. Especially that we plan some holidays soon. Who would take full time care for such a cutie? By the way, we called it LIMO:)

For the first two days, Limo was not able to do its hygienic on its own. So we needed to massage his belly, like a mother cat does. Even feeding was quite complicated for the first day. We found it on Sunday and we knew we have to find a house for it very quickly. Every next day, it learned something new. On Monday, it could eat without help, on Tuesday it knew how to pie into cat’s box, and on Wednesday it knew all corners of our house. Unfortunately, even though we fell in love and would really like to keep Limo, it was impossible. We knew it will feel much better with other buddies and having fun with them.

Yesterday, Thursday, we gave Limo away to a temporary nanny Bianca from the Dutch Foundation “Stichting Het Wijze Weeskitten” . Bianca and some other volunteers take care for lost cats and kittens. My both cats are “second hand” cats and I am a great fun of such organisations!

If you ever want a cat (or dog), please give a chance for the ones who already lost their houses and mum. I am sure you can find similar places in your own home countries. Make use of them, help all animals and give them a second chance.

Sour-spicy beef steak with Spätzle

One of the vegetables from the Odin-package was zucchini. Probably you remember, I’ve already mentioned couple times that some of the packages are “very green”:). I’d like to share it with you in a separate post. This week, luckily, it was green just by colour but I didn’t feel like eating just leaves…

Inspired by content of the Odin-set, I decided to make sour-spicy beef steak with macaroni. Is it something you would like to eat? Let me know…

Ingredients (for 1 person):

– 100g Spätzle (a type of egg noodle, soft in texture)

– 1/2 zucchini

– 1 slice beef steak

– 1/4 jar baby corn

– ca. 100ml crème (that would be ca. 1/2 bottle)

– 1cm rasped ginger

– Salt, pepper

– 1/2 tsp. chili powder (I made it slightly spicy)

– 1/2 tsp. red paprika powder

– Oil to fry

– Chives to decorate

Know-how:

  1. Cook Spätzle.
  2. Cut beef steak into 1cm slices, fry until brown.
  3. Add ginger, spices, chopped zucchini, fry until it softens.
  4. Add baby corn, fry for about 1 min.
  5. Pour crème into the pan and fry for about 5 minutes.
  6. Decorate with chives.
  7. Serve 🙂

A side note, beef steak is usually difficult to chew. You can marinate it a day before in oil, vinegar, mustard, etc. To avoid changing taste, wash it before frying.

The correlation of vitamin D and weight

Hi,

Have you noticed that during the summer time you are a bit slimmer? Is it caused because you choose seasonal vegetables, fruits, and drink more water? Or is it too warm and you have less appetite? Actually all of these factors influence our weight, however according to the studies published in the Journal of Women’s Health: “older women with insufficient vitamin D in their blood, are gaining weight easier and more than women with sufficient vitamin D level” [1]. Would you ever think of that?

The study lasted for 5 years and involved 4659 women, older than 65 years. It was performed on women who did not plan to lose their weight… [1]. Is it applicable to younger generation as well? I have no further details about the study but just this short information shows that the sun is important in our life

Super simple summer salad

The title says “summer” salad. You may ask… where is the summer? Well, definitely not in the Netherlands:) Surprisingly for about 4 hours, we had yesterday around 17 degrees and the sun. What a special day!

One of the organic vegetables from the Odin package, were broad beans. These are very popular in Poland. In the Netherlands it is very difficult to find a place where you can buy them. The peak season starts in the end of June and lasts until mid-September. I decided to give to my dish a bit of seasonal tint.

This recipe could not be easier. Moreover, it is healthy.

Yesterday with a little bit of sun, I felt really special. If it is cold outside, eat it as a side dish with a fried/boiled piece of meat. It will make your dish complete and summery.

Ingredients (for 2 people):

– 250g macaroni

– 1 red onion

– ½ salads bowl broad bean

– 200g sliced ham

– Fresh parsley

– 2 sour cucumbers

– Salt and pepper for seasoning

– 1tbsp. olive oil

*I forgot to add olives but they are on the picture:) With or without, the salad is absolutely great. If you decide to add olives, use about ½ of the package.

 

Know-how:

  1. Remove the beans from their pods. Cook to loosen their exterior coating and then remove the coating skin.
  2. Cook macaroni.
  3. Slice onion, chop parsley and cucumber, and then mix with macaroni and ham. Season with salt, pepper; spread olive oil on top.
  4. Top with broad bean.

  

By the way, do you like broad beans?

Cheer up! Eat rye wholemeal bran cereal cookies with forest fruits and ice cream…

I miss the summertime so much… It is grey, cold and windy almost every day:( To have at least a little bit of happiness and summer mood, I decided eat to dessert with seasonal fruits. It is now time for all kind of forest fruits. Tasty, delicate with great colour. As you know I like to eat healthy, that is why I decided for bran and wholemeal products. Everything what is brown, looks healthy to me:)

Are you already hungry? Try this out…

Ingredients (for 3 people):

– Kellogg’s all-bran flakes cereal

– 2tsp. sugar (you can use brown sugar or honey)

– 1tbsp. butter

– 3 full tbsp. rye wholemeal flour

– 1 egg

– Cream ice cream

– 3tbsp. American blueberries

– 3tbsp. blackberry jam

Know-how:

  1. Mix flakes, sugar, rye wholemeal flour and butter. Remember to leave your butter out of the fridge for a while so it will combine easier with other ingredients.
  2. Beat eggs until fluffy, add to above ingredients; mix.
  3. Spread mass over the baking paper and bake for half an hour in 180oC. Let it dry/cool down in the oven for another half an hour. (You can serve it warm if you want).
  4. Decorate every dish with 1 cookie, 1 ice cream ball, American blueberries, and decorate with blackberry jam. You can decorate it with warm jam. It will contrast nicely to cold ice cream.

Kitchen helper or rather first guest to eat my dessert 🙂

I tell you something… This summer is bad but thanks to this dessert I felt really cheerful.

Banana omelette

Hi,

Once in a while I want to eat something sweet… I prefer to choose healthy stuff, so everything what is homemade is always better for me.

Everyone knows how to prepare omelette. There are different recipes and this is mine.

Ingredients (for 1 person):

–          2 eggs

–          2 tbsp. milk

–          2 tbsp. flour

–          1 banana

–          Oil to fry

–          Sugar powder to top

 

Know-how:

  1. Beat eggs until fluffy.
  2. Add milk, flour to beaten eggs and mix all ingredients.
  3. Spread oil on pan, and pour egg mixture into pan. Top with sliced banana.
  4. Cook on medium heat until eggs begin to set. For the quicker result, cook under the lid.
  5. Lift up omelette and turn to other side. Cook for about 1-2 minutes until brown colour.
  6. Slide omelette onto a serving plate and top with sugar powder.
