Christmas pumpkin soup

Hi,

Christmas is coming and I want to present you a couple of interesting ideas. These are not traditional Christmas dishes but they are interesting 🙂  Ginger and mandarin make it really special!

 

I will present three dishes within the next few days: starter, main dish and dessert.

Today I will begin with starter: Christmas pumpkin soup

 

Ingredients (for 4 people):

–          1 pumpkin

–          1 mandarin

–          Bread

–          Cheese

–          1x1cm fresh ginger

–          3 x bay leaf

–          ½ tsp. thyme

–          Garlic powder

–          Cayenne pepper

–          Salt to taste

Christmas pumpkin soup

Know-how:

  1. Bake pumpkin in temperature 200oCelcius, for 30 minutes. Let it cool down for about half an hour.
  2. Peel off the skin and remove the pits.
  3. Chop pumpkin into small pieces and boil in about 1,5-2liter water with bay leaf until gets soft, then smash it.
  4. Add little salt to taste, mandarin juice and zest, grated ginger and thyme .Cook for another 10 minutes.
  5. In the meantime bake bread toasts with cheese, topped with garlic powder, cayenne pepper and thyme.
  6. Serve soup with toasts.

Black lentil soup

Hi,

It’s a great starter… I like it solo, with macaroni or with toasts. As decoration, I decided for French cheese. Any other cheese like mild Gouda would taste great as well.

Ingredients (for 4 people):

– One liter of water

– 100g black lentils

– 1 1/2 onion

– 2 small carrots

– 1/2 tsp. salt to taste

– 1/2 jar tomato in vinegar

– 1 big garlic clove

– 4tsp. sour crème

– 100-150g tagliolini or any other macaroni can be substituted with toasted bread for example with Philadelphia white cheese spread and garlic

– French cheese

Know-how:

  1. Boil 1 liter of water.
  2. Soak lentils for half an hour and rinse with water.
  3. Add black lentils, chopped onion and peeled carrots to boiling water.
  4. Add salt and tomatoes; cook for 20 minutes. Then blend all ingredients.
  5. Press 1 garlic clove and cook for 10 minutes.
  6. In the meantime cook macaroni or toast bread.
  7. Add chili powder to make it spicier. Salt and pepper for seasoning if still needed.
  8. Once your soup is done, cool it down for couple of minutes and add 4tsp of sour crème. One teaspoon per bowl.
  9. Decorate with cheese.

Pork vegetable soup

Yesterday on my dish was pork vegetable soup.
It is very simple, tasty, healthy and nutritious soup. Once you cook it, the whole house will smell with wonderful aroma.

Ingredients (for 1 person):
–          ½ small cup of wild rice
–          A part of pork with bone
–          ½ liter water
–          Vegetables mix (30% paprika- red, yellow, green; 25% tomatoes; 25% mushrooms; 20% onions). I like this mix because paprika gives unforgettable flavour and onion makes it a bit sweet.
–          2tsp. tomato puree
–          1 bay leaf
–          Salt, pepper and herbs (rosemary, thyme, oregano) to taste

 

Know-how:

  1. Cook rice.
  2. In separate pan cook pork for in half liter of water until meat is tender.
  3. Add vegetables, tomato puree, bay leaf, salt, pepper, herbs and cook for about 15min.
  4. Tear meat from the bone, add to soup.
  5. Discard bay leaves.
  6. Serve:)

Leftover bones can be eaten by a hunter:)

Asparagus soup with smoked salmon

May is the best time for eating asparagus. You can eat it until mid-June. In the Netherlands people eat white asparagus. The most known dishes made of asparagus are boiled or steamed asparagus with hollandaise sauce and ham. I decided for something else…

On my dish today will be: Asparagus soup with smoked salmon.

Ingredients (for 1 person):

–          Ca. 500-600ml water

–          1 vegetable bouillon cube

–          1 small onion

–          1x1cm fresh ginger root rasped

–          2 slices smoked salmon

–          3 leaves of chives

–          1tbsp. crème 15%

–          1tsp. curry

–          ¼ lemon

Know-how:

  1. Boil water and add vegetable cube to the pan
  2. Peel asparagus and cut into 3
  3. Peel onion and divide for 2 pieces
  4. Add vegetables to boiling water
  5.  Peel ginger and rasp (leave unwanted fibres behind); add to soup
  6. Add curry and crème to soup and stir
  7. Take out asparagus tips and slice into small pieces
  8. Puree the rest of vegetables with blender
  9. Serve in a bowl with sliced salmon, chives and asparagus tips
  10. Sprinkle with lemon juice
  11. You can add optionally blue cheese. I did it with the second round. It was delicious…. 🙂
