Rucola salad with shrimps

Today on my dish was: rucola salad with shrimps

 

Ingredients:

–          Rucola

–          Cocktail tomato’s

–          Onion

–          Chives

–          Cucumber

–          Olives (black and green)

–          Feta cheese

–          Olive oil

–          Raspberry vinegar

–          Pepper, salt

–          Shrimps fried in fresh garlic and butter with thyme

Autumn leaf colour- colourful salad with ginger-chili dressing

Hi,

It’s autumn. What I like the most about this time of the year is the colour of leaves. It’s so beautiful, changing, rich and powerful!

Inspired by nature, I present the following: colourful salad with ginger-chili dressing.

Ingredients (for 2 people):

–          1 small salad

–          ½ onion

–          Juice of 1 lemon

–          1tsp. sesame oil

–          1tbsp. soya sauce

–          2 carrots

–          1x1cm ginger

–          1 fresh red chili with ½ seeds

–          1tbsp. olive oil extra virgin

–          1tsp. honey

Know-how:

  1. Blend olive oil, sesame oil and soya sauce in a food processor.
  2. Add onion, ginger, chili and lemon juice. Cut and blend it with use of a food processor.
  3. Peel off the carrots and slice them. Cook in small amount of water unit tender-crisp to maximise flavour. Add honey and cook shortly.
  4. Decorate a platter with pre-washed salad. Top with carrots and sprinkle ginger-chili dressing over the top.

Lunch idea- salad

Hi,

I’m smiling when I see my lunch 🙂

It’s healthy and super tasty. Easy to do as well… That’s important when you’re at work, or busy at home.

Ingredients (for 1 person):

– 2 hands of field salad (known also as corn salad or Valerianella)

– 1 mozzarella

– 1/2 onion

– 1 orange paprika

– Fresh basil, couple leaves

– ca. 10cm cucumber

– 3tsp. sour crème, 10% fat

– 1tsp. extra virgin olive oil

– Salt and pepper

Know-how:

Cut veggies, mozzarella, mix, top with sour crème and olive oil. Bring to taste with salt and pepper.

It tastes delicious with a piece of bread.

Super simple summer salad

Hi,

The title says “summer” salad. You may ask… where is the summer? Well, definitely not in the Netherlands:) Surprisingly for about 4 hours, we had yesterday around 17 degrees and the sun. What a special day!

One of the organic vegetables from the Odin package, were broad beans. These are very popular in Poland. In the Netherlands it is very difficult to find a place where you can buy them. The peak season starts in the end of June and lasts until mid-September. I decided to give to my dish a bit of seasonal tint.

This recipe could not be easier. Moreover, it is healthy.

Yesterday with a little bit of sun, I felt really special. If it is cold outside, eat it as a side dish with a fried/boiled piece of meat. It will make your dish complete and summery.

Ingredients (for 2 people):

– 250g macaroni

– 1 red onion

– ½ salads bowl broad bean

– 200g sliced ham

– Fresh parsley

– 2 sour cucumbers

– Salt and pepper for seasoning

– 1tbsp. olive oil

*I forgot to add olives but they are on the picture:) With or without, the salad is absolutely great. If you decide to add olives, use about ½ of the package.

 

Know-how:

  1. Remove the beans from their pods. Cook to loosen their exterior coating and then remove the coating skin.
  2. Cook macaroni.
  3. Slice onion, chop parsley and cucumber, and then mix with macaroni and ham. Season with salt, pepper; spread olive oil on top.
  4. Top with broad bean.

  

By the way, do you like broad beans?

Healthy food hunter

Hi,

We all know that some healthier, organic food costs twice as much as regular, non-organic food.
That is probably a barrier for most of us, especially the ones who have less income. Wilma Waterlander in her PhD writes that a cheaper healthy food probably contributes to healthier food choices. She wrote that discounts encourage people to buy healthier food. However, discounts should be set just to fruits and vegetables. If you offer discount on all healthy products, it will just lead to higher caloric intake [1].
I agree with the author. Many times I feel really bad about the fact that healthy food is so expensive. As you know I buy organic vegetables but not all the time. If something is organic or not, in fact is not the highest priority for me. Of course, I feel much better eating something that is healthier and better to the environment but I don’t cry if I buy a normal food.

The most important for me is to deliver as much vegetables and fruits as possible. I try to eat recommended quantities of fruit and vegetables which are 200g/per day each (depending on scientific source, your age, gender, etc.).
In below picture you will notice how much I enjoy eating healthy. Beautiful, tasty, healthy fruits and vegetables for this week for two of us:) Yummy, they just look so appetising….!


Following one of the cooking groups, I found an interesting post about: “What best describes your cooking personality?” began by Meta West (Independent Cooking Instructor, Food Writer and Consultant, see more info and interesting tips at: http://cookingwithbarryandmeta.blogspot.com.
In my opinion “cooking personality”, all dishes that you prepare and consume are based on your lifestyle.
My curiousity pushed me to check out and also do online personality assessment. I clicked on the link posted by Barry and Meta and with the “My Plate, My Way” [2] interactive tool I did the test.
Do you have any doubts about my results? According to the test I am a “Health Seeker”. Well, that does not surprise for me at all. In case of doubt, scroll up and look at the picture once more:)
According to the site there are different food behaviours which depend i.e. on income, prizes, “the way we view food, what motivates us to choose one food over another or how much time we’re willing to spend preparing a meal” [2].

I encourage you to do the test. I am curious of your results:)

Pesto feast

One of the organic vegetables that I got this week was Chinese cabbage.

This year there is no spring. It’s cold, cloudy and rainy. I decided to bring a bit of happiness on my dish and used young potatoes, fish and pesto which to me associates with Italian coast.

Ingredients (for 2 people):

–          ½ Chinese cabbage

–          1 apple

–          Juice of ½ green lemon

–          1tbsp. pesto

–          1tbsp. sour crème

–          2tbsp. pine nuts

–          Potatoes

–          Perch fillets

 

Know-how:

  1. Steam potatoes in pressure cooker. Do not peel off. You can also boil them if you want. (I didn’t use any salt to keep the natural taste of the potatoes)
  2. Spread pesto over perch fillet and simmer in water. (If you use pesto, you do not need salt:))
  3. Slice cabbage into thin strips, squeeze lemon over the top and mix.
  4. Peel off the apple, grade and add to Chinese cabbage.
  5. Mix sour crème and pesto in separate container, add to vegetables so the taste will mingle.
  6. Fry pine nuts that will be used for perch fillet and Chinese cabbage salad decoration.

Toast pizza with salad

Hi,

If you have visitors and you are out of ideas, toast pizza, is a great idea. You spend minor time on preparation and the result is very good.

Ingredients for salad (4 people):

–          ¾ oak leaf lettuce

–          200g cherry tomatoes

–          1/3 jar of green olives, sliced

–          ½ white cheese, similar to feta

–          ½ onion

–          1tbsp. olive oil

–          1tbsp. raspberry vinegar

–          Salt and pepper for seasoning

Know-how for salad (4 people):

  1. Tear lettuce into pieces
  2. Cut cherry tomatoes in half
  3. Slice onion
  4. Cut white cheese into cubes
  5. Whisk oil and vinegar, spread over the salad and season with salt and pepper

Ingredients for toast pizza (4 people):

–          12 slices white bread

–          6-7 eggs

–          1 onion

–          1 zucchini

–          2 garlic cloves

–          ½ package, ca.100g ham

–          Pesto

–          1/3 jar green beans

–          1 package, ca. 200g Young Gouda cheese

–          Thyme and chili

–          Oil

Know-how for toast pizza (4 people):

  1. Cut zucchini and onion, cook under lid, add pressed garlic
  2. Oil a baking mould to prevent sticking
  3. Whip eggs
  4. Dip 4 slices in egg mixture and place in baking mould
  5. Top with cheese, zucchini and onion
  6. Put another layer of bread, spread one side with pesto, top the other side with the rest of egg mixture, ham, green beans and cheese
  7. Put the last layer of bread, top with cheese and season with thyme and chili
  8. Bake in 200 Celsius degrees for about 15-20 minutes

You’ll get a great toast pizza with a soft and juicy bottom and a crunchy top
