Halloween is closer and closer. Do you have any plans for a Halloween party?

Just surfing on a net, I found a great post about Halloween dishes.

I already did my pre-Halloween pumpkin “kopytka”. I’ll share it with you later this week. The original recipe is done based on potatoes. If you’re interested, click “here”.

Lunch idea- salad

I’m smiling when I see my lunch 🙂

It’s healthy and super tasty. Easy to do as well… That’s important when you’re at work, or busy at home.

Ingredients (for 1 person):

– 2 hands of field salad (known also as corn salad or Valerianella)

– 1 mozzarella

– 1/2 onion

– 1 orange paprika

– Fresh basil, couple leaves

– ca. 10cm cucumber

– 3tsp. sour crème, 10% fat

– 1tsp. extra virgin olive oil

– Salt and pepper

Know-how:

Cut veggies, mozzarella, mix, top with sour crème and olive oil. Bring to taste with salt and pepper.

It tastes delicious with a piece of bread.

Hawaiian burger with homemade French Fries

Hi,

 

This weekend I ate my dinner at LaPlace restaurant (laplace.nl) in Nijmegen, the Netherlands. With incredible view of Downtown and the river, I enjoyed my Hawaiian burger with mustard sauce and homemade French Fries.

I can’t recall eating a burger with pineapple… Well, I loved that combination.

French Fries were just excellent!

Coriander, my best friend??? Spicy chicken curry

I promised to share this recipe a long time ago and finally I do it;) When thinking of a dish for my friends, I got inspired by one of the Albert Heijn magazines; I decided to cook Thai.

I must say, I never liked coriander. One of my Indian friends serves it quite a lot in their regional dishes. These were the only coriander dishes I liked. I was always wondering why Nigella Lawson is so enthusiastic about it. Well, I decided to take a risk, follow the recipe and use coriander.

I tell you! I felt in love with it! 🙂

Just to warn you… You need to spend some time in the kitchen; it’s not a quick recipe but I tell you… it’s definitely worth of your time! Let’s get to the point.

Ingredients (for four people):

–          300g rice

–          4cm fresh ginger

–          1 red pepper

–          2tbsp. oil

–          2 garlic cloves

–          2tsp. sesame oil

–          300g chicken breast

–          1 can coconut milk

–          1 pack basil

–          1 pack coriander

–          2tbsp. fish sauce (I used 8 king prawns instead)

–          2tsp. sugar

–          2tbsp. corn starch

–          1 lime

–          Salt and pepper to taste

Know-how:

  1. Cook rice.
  2. Grate ginger.
  3. Remove pits from red pepper and slice into thin pieces.
  4. Fry ginger and red pepper in oil and sesame oil for about 3min.
  5. Add chopped chicken and fry for about 4min.
  6. Blend coconut milk with basil and 2/3 coriander. Add it together with fish sauce (I used 8 sliced king prawns instead) and sugar. Cook.
  7. Stir corn starch with 4tbsp. water and add to sauce. Cook unit sauce gets a bit thicker.
  8. Grate off the very outside skin of the lime peel and squeeze it. Add to sauce together with salt and pepper. Cook for short time.
  9. Serve with cooked rice, and sprinkle coriander over the top.
  10. Voila 🙂

Cooking in the Polish way- Bratwurst

As promised in my recent posts, inspired with my business trip to Germany, Sömmerda/Erfurt and my Polish roots… I present the following.

Ingredients:

–        Potatoes

–        Bratwurst x 4

–        Onion x 4

–        Red paprika x 1/2

–        Marjoram x 2tbsp.

–        Chili pepper powder x 1tsp.

–        Red chili powder x 2tbsp.

–        Salt and pepper to taste

Know-how:

  1. Boil potatoes.
  2. Soak bratwurst for 20min in cold water.
  3. Fry bratwurst and peel of the skin.
  4. Slice onion and fry.
  5. Slice red paprika and add to onion; fry.
  6. Add sliced bratwurst and fry. Add a bit of water to get a sauce.
  7. Add all spices and fry/boil for couple of minutes.
  8. Serve with warm potatoes.

Bratwurst with mustard

Hi,

 

As promised on Sunday, I’m sharing with you a bratwurst recipe. Another one is on the way.

Bratwurst has very mild taste and spicy mustard will give it a tint of character.

It’s super easy!!!

Ingredients:

– Bratwurst

– Mustard

– Bread

 

Know-how:

  1. Soak bratwurst for 20min in cold water.
  2. Fry it.
  3. Serve with mustard. It tastes delicious with bread.

Rice with ham and lettuce salad

One of my tricks to cook fast is a dish with rice:)

 

Rice with ham and lettuce salad is a perfect dish if you want to cook quickly with a minimum effort.

 

 

Ingredients:

 

– Lettuce

 

– Natural yoghurt

 

– Radish

 

– Lemon

 

– Salt and pepper for seasoning

 

– Rice

 

– Ham

 

– Sour-sweet chili sauce

 

 

Know-how:

 

  1. Cook rice.

  2. Rip lettuce, add diced radish, top with yoghurt and squeezed lemon juice, salt and pepper to taste.

  3. Cut ham into small cubes and add for the last 2-3 minutes to cook with rice.

  4. Top rice and ham with bit of sweet chili sauce

 

Voila 🙂
